Mom's Chicken Stuffing
My mom made the best turkey/chicken stuffing ever. And I mean ever! I love stuffing and have tried quite a few in my time but my mom's is still my favourite. My husband thinks it is pretty amazing too though his favorite is still his British sausage meat stuffing. Though ironically it is not my mom's recipe. I found it when going through Auntie Lily's cookbook. So it appears to be another recipe handed down through that side of the family.
The key to the stuffing are the bread crumbs. You need to use the big chunks of dried bread not the fine bread crumbs. I usually make my own by chopping up bread and roasting them in the oven as a lot of countries I have lived in only have the finely ground bread crumbs. We usually stuffed the bird after it had cooked for a bit (for a small chicken after 30 minutes and a big turkey usually after its first 2 hours in the oven) and then put the rest of the stuffing in tin foil and cooked it in the oven.
Ingredients
1 onion diced
1/2 cup butter
2 stalks of celery
1/2 tsp salt
1/2 pepper
1 tsp sage
2 tsp poultry seasoning
8 cups bread crumbs
2-3 eggs
1 cup water
Preparation
Melt the butter in a large frying pan and then fry the chopped onions in it. Add the celery and cook until soft. Add the salt, pepper, sage and poultry seasoning. Add the bread crumbs along with the water. You may need to add more water to get the mix to a soft consistency. Add the eggs and mix well so it all sticks together and is quite soft. Stuff the chicken or turkey base don cooking instructions.
